Similar to other noxious ingredients linked to dementia, diacetyl has been shown to generate the protein amyloid that’s linked to Alzheimer’s. Furthermore, other research found that diacetyl disturbs the production of glyoxalase I, which is a detoxifying protein that keeps amyloids from sticking to one another.
