Yes, the thought of making an ice cream sandwich is kind of ridiculous, but you will definitely change your mind in a few seconds.

Since it is summer and we prefer to eat anything that is cool and sweet, I have discovered this dessert back when I was in a wedding, and since the second I tasted it, I couldn’t be able to get over it. It is the perfect combination of your favorite ice cream, chocolate, and the perfect size to be eaten all at once.

A few months earlier, I was invited to this wedding where I was first introduced to these magical desserts. I thought I was the only person who went crazy over them, but everyone was just stuffing their mouths and walking around looking for more. Literally, no one was able to get enough.

So instead of just enjoying it and keep on dreaming about it for the rest of my life, I started looking for the creative, genius who made them, and I was lucky enough to find her as a guest in the wedding party.

Here are the ingredients you will need:

– The Crispy Crunchy Oatmeal cookies of Merrill: it depends on how big you want the ice cream sandwiches. Personally, I used 18 cookies and then put them all in the freezer. (You will know why later.)

– Vanilla ice cream: you can make it at home or just buy it from any store. I recommend the second option because the quality is guaranteed and it had a very nice texture.

– Canola oil: 3 tablespoons

– Dark chocolate: 24 ounces.
