Once our vegetables have roasted they can be assembled over a bowl of quinoa or any other grain, with a splash of extra virgin olive oil, and rapidly whisk together a dressing. For a fancy touch, you can top the whole thing with a fried or poached egg. Avocado and a sprinkle of fresh parsley can be added as well. So much goodness in a single bowl.
1.Easy Chicken Zucchini Noodle Stir-Fry
This healthy and tasty stir-fry is ideal for busy weeknights because it only takes a maximum of 30 minutes to make. It is loaded with colorful vegetables, chicken, and a simple sauce! And the zucchini noodles are brilliant! They are fun to eat and so filling!
Cook the peppers, carrot, red onion, snap peas, mushrooms, and garlic, with a tablespoon of olive oil. Keep stirring until vegetables are tender but crisp (about 4 minutes). Add the sauce to the pan and cook until it thickens up, (2-3 minutes), then add the chicken and stir to combine. Gently stir in the zucchini noodles. Cook for 1 minute, making sure the noodles are well coated with the sauce.
